Immune-boosting sweet potato soup with turmeric and black beans recipe

Sit down to this heartwarming bowl of sweet potato soup filled with immune-boosting antioxidants, thanks to turmeric, ginger and tomatoes. Featuring coconut milk and cumin, this delectable soup doesn’t lack for flavor either!

Ingredients for 6 servings:

  • 2 14-ounce cans black beans, drained and rinsed
  • 1 14-ounce can diced tomatoes, with liquid
  • 1 small sweet onion, diced
  • 3 cups vegetable broth
  • 2 cups diced sweet potatoes
  • 1 cup full-fat coconut milk
  • 1/4 cup finely chopped fresh cilantro
  • 2 tablespoons avocado oil or olive oil
  • 1 tablespoon chopped fresh ginger
  • 2 teaspoons turmeric powder
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • Juice of 2 limes

Preparation:

  1. Heat oil in a large pot over medium heat. Saute the onion, ginger and sweet potatoes for 4–5 minutes or until fragrant.
  2. Stir in tomatoes and black beans. Season with turmeric, cumin and salt. Stir well before pouring in your broth.
  3. Bring the soup to a boil, then reduce heat. Simmer for 10 minutes or until the flavors develop.
  4. Pour in coconut milk and fresh lime juice. Stir well.
  5. Serve hot in bowls and top with fresh cilantro.
